Getting Started

1. In a large bowl or food processor, add flour, salt and butter. Cut the cold butter into the flour until coarse crumbs begin to form.

2. Then add sugar and starter. Mix until the starter is fully incorporated. Cover the dough and allow it to ferment overnight or at least 8 hours in the refrigerator.

3.Remove your dough from the bowl onto a floured surface. Preheat your oven to 425. You can wait until the dough comes to room temperature or roll it out cold. Divide the dough into halves, and roll out each half to about 1/4 inch thick.

4. Lay the dough onto a pie dish and design however you like. Poke holes with a fork in the dough to prevent shrinking. Put the dough in the oven for 10 minutes, and then brush the crust with cream, then fill with desired fillings.

If your pastry edges start to burn in the oven, wrap the edges in tinfoil and unwrap when finish cooking.
