I know there are a lot of Sourdough Brownie recipes out there, but you’ve found the absolute BEST one here! I swear I’ve never had more compliments on a recipe than this one. It’s the BEST brownie I’ve ever had, and many people say the same thing when they try it! This is my second most popular recipe, my cinnamon rolls are by far the most requested. But these brownies are so much easier to make and are always a crowd pleaser.
This recipe calls for 5 oz of chocolate, and I personally love to use dark chocolate. That is what gives this recipe its delicious dark and rich flavor. You can use whatever type of chocolate you like most to give it the flavor you want! You can also add chocolate chips or nuts to give it more texture. It’s a great and easy recipe that the whole family will love.
How Long Will This Recipe Take?
Of course the best part is that this recipe has no flour so you will have no fermentation time! This is a one day recipe and you only need about an hour to make these brownies.

What You Will Need
This recipe makes enough sourdough brownies for a 9x9inch pan.
Eggs: You will need 3 eggs total, 2 full eggs and 1 egg white.
Egg White: Separate the yolk from the white and just use the white.
Granulated Sugar: Your regular pantry sugar will work great.
Brown Sugar: Brown sugar adds a great darker and deeper flavor. It also adds a bit more moisture.
Water: Just a bit to help the ingredients come together
Vanilla Extract: This helps to make the
Butter: I used unsalted in this recipe. If you only have salted you’ll want to account for that with removing some of the added salt in this recipe.
Oil: You can use your favorite oil, I prefer avocado because of its high smoke point and subtle flavor.
Salt: A little salt brightens up the flavors and cuts through some of the sweetness.
Dark Chocolate: You can use your favorite brand of chocolate chips or bar chocolate. You are going to melt it on the stove so you can use whatever chocolate you like. The better quality chocolate the deeper and richer the flavor.
Cocoa Powder: Any kind will work, but I really love this brand!
Sourdough Discard: You can pull your discard right out of the fridge! It doesn’t have to be active at all.

How to Make Sourdough Brownies
Sourdough brownies are a little more work than taking a box mix and adding a few things. But you’ll be so blown away by the difference!! They are SO much better tasting and better for you too. This is a one day discard recipe.
1. Put eggs and egg white, and sugar and brown sugar in a large bowl and whip until foamy. Then add water and vanilla and whip until the mixture is entirely combined with the sugar completely dissolved.
2. In a small sauce pot, add butter, oil, salt, and chocolate and stir over low heat until it is melted then remove from heat. Add cocoa and mix until combined. Then add sourdough starter and stir until combined.
3. Add your chocolate mixture to your egg mixture, gently folding it in until combined.
4. Butter a 9x9in pan and put batter in pan. Cook at 375 for 25 minutes.
Tips for Making Sourdough Brownies
Heating Ingredients on the Stove: Make sure you melt the chocolate low and slow. You don’t want to heat things up too fast or the chocolate could break and everything will be clumpy and dull instead of shiny and smooth.
Do I Need Active Starter? Nope! You can pull your discard right out of the fridge if you want to!
Can I Use a Sweet Stiff Starter? Absolutely! You can use a sweeter starter if you don’t want to taste any tangy flavor in the brownies.

- 2/3 C sugar
- 1/2 C brown sugar
- 2 Tbs water
- 1 tsp vanilla
- 1/4 C unsalted butter
- 1/4 C oil
- 1/2 tsp salt
- 5 oz dark chocolate
- 1/2 C cocoa powder
- 1/2 C sourdough starter, active or discard
Instructions
- Preheat oven to 375 degrees. Butter or oil a 9×9 inch pan.
- Put eggs and egg white, and sugar and brown sugar in a large bowl and whip until foamy. Then add water and vanilla and whip until the mixture is entirely combined with the sugar completely dissolved.
- In a small sauce pot, add butter, oil, salt, and chocolate and stir over low heat until it is melted then remove from heat. Add cocoa and mix until combined. Then add sourdough starter and stir until combined.
- Add your chocolate mixture to your egg mixture, gently folding it in until combined.
- Bake the brownies for 25 minutes, until the top is firm. The inside will still be soft, you can bake it for longer if you don't want a gooey brownie.
