This Sourdough Zucchini Bread is so quick and easy and is also the perfect way to use up your zucchini! This zucchini will moisten the bread and give it a perfectly spongy texture.

Getting Started

1. In a large bowl, add discard, oil, and sugar and stir until combined. Then add eggs and sour cream and stir until combined.

2. In a small bowl, combine cocoa powder, baking powder, baking soda, and salt. Then add this mixture to the batter and stir until combined.

3. Preheat oven to 375 degrees. Grate 1 C zucchini, and wring out the zucchini using cheese cloth or your hands. Then add the zucchini to the batter. Now is the time to add nuts, chocolate chips, or dried fruit if you are adding that to your bread.

4. Line your muffin pan with liners. Oil your liners. Then add batter to your liners, filling them about 2/3 of the way.

5. Bake the muffins for 20-25 minutes at 375 degrees. Or if you are making a loaf, bake for 1 hour.

Something Diffrent

If you still want that perfect zucchini chocolate Treat but don’t want a bread? Just toss your batter into muffin tins and have the perfect Chocolate Zucchini Muffins and on the other hand Sourdough Zucchini Bread! These are perfect for breakfast or add on a Russian Butter Cream Frosting and It is now a perfect party favor or dessert!

Ingredients
  

  • 2 Cup Fed Discard
  • 1/2 Cup Oil
  • 1 Cup Granulated Sugar
  • 2 Large Eggs
  • 1/2 Cup Sourcream or Greek Yogurt
  • 1/2 Cup Coco Powder
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 1 Cup Zucchini Shredded
